Of the books listed, is there 1 that someone would recommend over the others?

I have read the Speed Secrets books and they are very well written in layman's terms. Not overly technical and very informative.

I have heard only VERY good things about "Drive to Win" but have not read it myself, yet.

Speed Secrets is a great place to start I have 5 of the 6 books. All have very good information without being complicated.

I have "Going Faster" If you are looking for the book that just tells you to "increase rebound under bla blah " this is not the book for you.
If you want to truly understand the dynamics of each component and relate them to car setup, then this is good reading.
It also has great fundamental steps to the basics of "walking" the track or for SIM purposes driving around slow and finding key visual reference points, along with MANY other driving tips. It is a plethora of information on how to improve your driving skills.
Great drivers of many American road racing series have contributed to this book, mainly Danny "Spin & Win" Sullivan. It is the official book of Skip Barber Driving Schools.

A DVD is available from netflix... Skip Barber: Going Faster .... it is a great video from the 80's, which has great driving and basic setup tips and some comedy from the dated clothes and production.

Here are some more links to driving or setup tips...

I have both Drive to Win and Going Faster!. They are ok, but the Speed Secret series are so far the best (particulary the second one) in my opinion. Very good reading and a joy doing it.

If I might also recommend another GREAT read:

WINNING: A race drivers handbook

Not an encyclopedia, but good reference material and also includes several drivers lap input from several tracks we use here at R2P.

Ok, I purchased "Going Faster", and although I am only thru the first chapter, it has already greatly improved my understanding of what I really should be looking for on track. If I can put what I've learned into practice is another question, but I am happy I got the book.
